I wanted to share some yummy breakfast options that are really popular around our house. These were some of our first foods since all the ingredients are simple and flexible. Bonus…all the recipes below are gluten free for any gluten sensitive households. I’ve also included an egg free option below too.
Banana Pancakes (flour free)
This was one of our first combo meals and we keep it in rotation around the house. Its only really requires two ingredients so I rely on this often when I’m too tired in the morning to think!
Recipe
- 1 banana
- 2 eggs
- sprinkle cinnamon and nutmeg
- Toppings in video (mashed raspberries + coconut shavings and peanut butter + coconut shavings)
Method
Mash banana and combine with eggs. Add in optional seasonings + nut butter. Grill on medium heat and enjoy! Recommend smearing top with mashed berries or different nut butters.
Blueberry Almond Pancakes (flour free)
Another great option if you’re looking for a flour free pancake that’s packed with flavor. I keep this one in rotation because its a great way to keep my son exposed to almonds (nut allergy).
Recipe
- 1 cup of ground up almonds
- 1 egg
- 1/8 cup of milk
- 1 tsp. vanilla extract
- Handful of blueberries
Method
Put all ingredients into food processor except blueberries and mix until smooth. Fold in blueberries to batter and grill on medium heat. Enjoy!
Banana Berry + Oats Pancakes (flour & egg free)
This one is for all of you who may be looking for a flour and egg free alternative! You can really mix it up with the fruit options with this recipe and add in scoops of peanut butter or nut butters to give it that extra kick!
Recipe
- Handful of berries
- 1 banana
- 1/2 cup of oats
- 1/2 cup milk
- 1 Tbsp. of nut butter (optional)
Method
Place all ingredients in a food processor and blend until batter is a smooth. Pour 1-2 Tbsp. onto pan on medium heat.
